Zero food waste program for hotels - restaurants

The project at a 5* Hotel, addresses the pressing need for sustainable practices in the hospitality sector. The project leverages artificial intelligence to tackle food waste reduction, optimize inventory management, and lower carbon emissions. By integrating customer preference data with waste tracking and inventory systems, the HGC tool provides actionable insights to enhance efficiency and sustainability.

Futhermore, the certification of adopting more green practices and policies is innovative in the context of sustainable tourism.

The innovation lies in combining AI-driven data analytics with a focus on green practices tailored to small and medium enterprises (SMEs) in the hospitality industry. This approach ensures practical, scalable solutions to reduce environmental impact while maintaining luxury service standards.

The project addresses three key needs:

1. Reducing Environmental Footprint &Circularity: By tracking food waste and carbon emissions, the system empowers the hotel to make data-driven decisions, directly aligning with circular economy principles and sustainability goals.it also contribute to the circularity by calculating the biodegradation and environmental pollution factors associated with each wasted item.

2. Empowering Staff and Guests: Comprehensive training programs equip staff with green and digital skills, enabling them to promote sustainable practices to guests, enhancing awareness and engagement.

3. Driving the Twin Transition: HGC supports both green and digital transitions by combining cutting edge AI technology with eco-friendly strategies.

Sustainabilty : through the application for the certification of adopting more green practices & policies. This originality lies in tailoring advanced technologies to meet the specific challenges of small-scale, remote tourism enterprises like Varos Hotel, creating a model that is both replicable and impactful in similar contexts across Europe.

The solutions are novel for the Hotel as the AI tool will serve the purpose of sustainability and its green transition. The innovation solutions lay to the tools of the system: DATA-MANAGEMENT- SUSTAINABILITY TRACKING.

By integrating AI, the hotel gains REAL-TIME DATA into customer preferences, INVENTORY
MANAGEMENT through product Labelling, packaging, origin, SUPPLIERS MANAGEMENT through detailing listing with additional storage location info, type of transportation, delivery time, SUSTAINABILITY TRACKING through biodegradation & environmental pollution factor Adjustment and WASTE TRACKING through meal plates weighting, measuring the weighted food waste and accordingly the AI will calculate based on the data the actual quantities to be ordered and expected food waste.

The project introduces innovative digital tools to “THE” Hotel, revolutionizing its operational processes while significantly enhancing its sustainability efforts. This innovation is unique because it not only helps reduce waste but also tailors services to customer preferences, improving guest satisfaction while minimizing environmental impact.

The solution addresses key challenges within the SME hospitality sector: waste reduction, sustainable sourcing, and inventory optimization.

Additionally, the Green Certification helps the Hotel, to adopt sustainable practices, contributing to circular economy, engaging the local society and raising the hotel’s profile as a leader in green tourism.

In sum, the adoption of this AI-powered system brings direct benefits such as cost savings, enhanced customer service, and a strengthened commitment to sustainability. It enables the hotel to meet customer demand for eco-friendly practices while improving internal efficiency and ensuring long-term environmental impact reduction.
